There is no getting away from it, RVs are in vogue. Millennials seem to be boosting the current boom with a 70% increase, a category that was in no way inspired to explore their countries before the pandemic.

For that reason, it is always good to have some RV camping dinner ideas to hand before you set off on your travels. To help you we have put together some of our favorites.
1. Lemon Garlic Salmon
When considering RV camping dinner ideas, there is nothing like fresh fish when you are in the great outdoors. Something about it invokes a rustic feel, especially if done on the grill.
We are using salmon for this dish, but you can cook any fish to perfection using a few simple ingredients:
- Salmon
- Salt and pepper
- Garlic powder
- Lemon
- Olive oil
- Bell peppers (optional)
All you need to do is season the salmon with garlic powder, salt, and pepper and then drizzle them in olive oil. Place them on kitchen foil and put a few slices of lemon on top. We like the addition of a few sliced bell peppers as well but you can use zucchini too or any other vegs to your liking.
Wrap them up and leave them cooking on your grill or oven for 10 – 15 mins until they are done to your taste. Great flavor in only 20-25 mins including prep time!
2. Pulled Pork Sandwiches
After a long day of trekking or driving often the thought of getting something going on the stove is enough to put you off eating anything in the first place.
This is why preparing something to put in your RV’s fridge to have some options you get on the open road is one of the best RV camping dinner ideas.
Our favorite are sandwiches…but not just any. We’re talking pulled pork sandwiches. This family favorite is an easy one to prepare while you are getting things together the day before your journey.
Ingredients:
- 1 pork tenderloin cut into 4
- 1/4 cup of BBQ sauce
- 1 teaspoon of garlic powder
- 1 teaspoon of cumin
- 1/4 cup of onion
- 1 can of tinned tomatoes
- 1 teaspoon of black pepper
The great thing about this recipe is its simplicity. Just throw the ingredients in a pot at medium heat after bringing them to a boil and leave them to simmer for 60 mins.
The succulent pork should come away easily. After letting it cool, store it in a container for the fridge and all you’ll need to do is toast up some buns, garnish with slaw or salad, and dinner is sorted!
3. Cheese and Wine
It always pays to be prepared if you’re planning an RV vacation. Unless you have RV extended warranty cover, it’s good to have something easy to make that isn’t dependent on your RV kitchen.
For us, you simply can’t go wrong with a good cheese and meat charcuterie board. And we’re sure you’ll agree! Before setting off or along your way stock up on your favorite cold cuts like parma ham, salami, or mortadella as well as cheeses. accompany them with olives, hummus, and most importantly a good wine, and who knows, you may even consider giving up cooking meals for your whole trip!
